Chateau Brehat Castillon Cotes de Bordeaux
In 2010, Béatrice and Jérôme de Monteil decided it was time for a complete change of career and lifestyle, throwing themselves wholeheartedly into running Château Haut-Rocher. Owned by the family since the 15thcentury, the estate is located within the original boundaries of the Saint-Emilion wine region, in the village of Saint-Etienne de Lisse. With 13 ha of vines (8ha in the Saint-Emilion Grand Cru appellation area and 5ha in Castillon Côtes de Bordeaux DGC) the vines serve the labels Château Haut-Rocher and Château Bréhat, respectively.
With the goal of eventually achieving organic certification, Béatrice and Jérôme have enlisted the support of a team of technicians and consultant winemaker Thomas Duclos, after realising their ambitions; something they realized via their Saint-Emilion vineyards.

Jean-Marc Boillot was born in Volnay, into a family of vignerons. Between 1971-1984, he worked alongside his grandfather in Volnay, Pommard, and Meursault until a family disagreement between Jean-Marc, his grandfather, his father, and his brother led him to leave the family business and pursue his own winemaking journey. In 1988, Jean-Marc made wine in Puligny-Montrachet with Olivier Leflaive, a new négociant at the time. From there, he started making wine under his own name, acquiring plots in Beaune and Pommard- it wasn’t until Jean-Marc’s grandfather tasted his wine that their relationship began turning for the better. When his grandfather retired, he left Jean-Marc plots in Volnay, Pommard, and Meursault- as well as an unused cellar called “La Pommardière.” Cut to 1993 and another 5 ha of land was inherited by Jean-Marc via his maternal grandfather; he acquired vineyards in Chassagne-Montrachet, Puligny-Montrachet, and Bâtard-Montrachet.
“Boillot makes white and red wine with equal facility, and with equally impressive results. Few people are thus gifted, it is like being ambidextrous.” Raymond Blake, Côte d’Or.
Jean-Marc, now in his seventies, is often referred to as the ‘quiet pur-sang’ of Burgundy, and far from retiring. His son-in-law, François, is now in charge of the winemaking under the watchful eye of his father-in-law.

Armagnac is France’s oldest wine based eau-de-vie, produced in the southwest of France, with over 700 years of History. Today there are 800 producers, 500 of which are independently owned, including Castarede. Founded in 1832 they are still family owned, with Florence Castarede is at the helm making her the sixth generation Armagnac producer.
The location of the Lure mountain, between the Alps and the Mediterranean, boasts a unique climate and a diverse variety of plants and flowers used for generations in tinctures and medicines. Distillerie de Lure, founded in 1898 at Forcalquier, has had a succession of owners over the years, among them Henri Bardouin, a passionate man with a keen interest in medicinal plants and herbs. In 1974 Alain Robert and his small team took the helm of the company now known as Distilleries et Domaines de Provence along with many recipes dating back to the founding of the distillery and the studious work of Henri Bardouin.
Gekkeikan Nigori is a rough-filtered Junmai-shu. By definition Nigori means ‘cloudy’ and this style of sake is thicker and creamier in texture, with a milk-like appearance. The ‘cloudiness’ comes from the rice sediment which remains in the sake after it has been passed through a special coarse-mesh filter. Characteristically sweet with a creamy medium-body. Hints of honey and tropical fruit aromas and flavors terminate into a long finish.
Gekkeikan’s founder, Jiemon Okura established his sake brewery in the town of Fushimi, a location well-known for its high quality water. Access to the ideal ingredients combined with the location enabled Okura and his successors’ business to thrive. Today, Gekkeikan’s passion for pleasing the sake connoisseur remains unchanged.
