Domaine de la Madone Beaujolais Villages

Domaine de la Madone is located in the heart of Beaujolais in the Beaujolais Villages area. The vineyard spreads over 28 ha over two villages « Le Perréon” and “Vaux en Beaujolais” (better known as “Clochemerle”). The estate is divided into 90 small plots of different exposures and altitudes (between 300 and 500 m). With vines ranging from 15 years to more then a hundred years (40 years old in average). Gamay is planted on South facing steep slopes on pink granite soils. This diversity of terroirs is key to enable the Beraerd brothers to craft complex wines with depth and soul.  On the Northern facing slopes, one can find the estates parcels of Chardonnay, this grape expressing more elegance on those more clay soils.  A part of the estate (2,5 ha) is now fully organic while the rest is trained using sustainable viticulture methods. Due to the strong declivity in the parcels, most of the work is manual, and some parcels are even to steep to be worked with a tractor.  A mix of old ancestral secrets and modern techniques is used in the vineyard and in the cellar to obtain grapes with an excellent sanitary state and an optimum ripeness.

Yields are always limited, with shoot thinning and green harvesting when necessary. The harvest is always manual in small boxes to preserve the grapes integrity. A first sorting is made within the parcel and a second one on a sorting table in the cellar. In the cellar, the estate has made significant investments to improve quality over the years with gentle pneumatic press, temperature controlled fermenters etc. Whether in the vineyard or in the cellar The Bererd winemaking and quality model has always been Burgundy,  explaining the outstanding  quality of their villages and depth of their wines.

Jean Bourdy Cotes du Jura Blanc

The Bourdy family has been in the wine business since 1475. For seven generations, this deeply rooted Jura family has been amassing a collection of vintage wines that date back to 1781, all stored and maintained in excellent condition. According to Robert Parker: “Wines from Jean-Francois Bourdy’s small cellar in Arlay have been trickling into the world’s wine markets with increasing regularity over the past decade (though there is a history of these wines in the U.S. even before World War II), causing considerable waves, an American fan club having accumulated, with buzz centring understandably around the Bourdys’ huge assortment of vintages spanning well more than a
century.” Their estate is just southeast of Burgundy in the Jura region, where they grow Chardonnay, Pinot Noir, Trousseau and Poulsard.

Kilchoman Loch Gorm Islay

Anthony Wills founded the Kilchoman Distillery after decades learning the importance of blending, wood management, and cask selection as an independent bottler. Anthony dreamed of opening a distillery that paid homage to the rich history of Scottish farm distilling and offered a counterpoint to the industrial distilleries pumping out 10 million liters a year. In 2005, that dream was realized when the Kilchoman distillery finished its inaugural batch making it the first new distillery on Islay in over 120 years.

The picturesque Kilchoman Distillery sits nestled amongst the traditional buildings of Rockside Farm on the north-west coast of Islay. Famous as Islay’s Farm Distillery, their barley fields stretch west to the shores of Machir Bay and the Atlantic Ocean. Through their “barley to bottle” philosophy, this family-run project has built itself quite a following over the past 15 years.

Wild Outcider: Ancestral

Boars Back Cider is now called Wild Wines & Spirits

For centuries in the Annapolis Valley, farmers have pressed apples and fermented the juice in cool cellars over many months as a means of preservation and to yield a diverse range of cider refreshments. Wild Wines & Spirits uses native and selected yeasts to ferment pure apple juice, pressed on-site from apples they hand pick themselves. The cider is fermented slowly over the cool winter months, aged in barrels and tanks, then blended and bottled the following year.
