Taste of Tuscany Workshop

Italy is considered the world’s largest wine producing nation by volume and contains some of the most diverse and unique wine producing regions. Boasting an enormous selection of Italian wines, it is safe to say that Bishop’s Cellar has a love affair with wine from all corners of “the boot”.

Agriculture is at the heart of Tuscany’s identity and “the big three”—grape vines, olive trees and wheat- were historically all planted together in the same fields. Join Kathryn for a delicious exploration of Tuscany’s wines, from Chianti to “Supertuscans” and everything in between.

Villa Cafaggio Chianti Classico

With records that date back to 1408, Villa Cafaggio’s estate was then referred to as “Cahago,” which means “enclosed, cultivated field.” Later in the fifteenth century, there was evidence to suggest that the property was owned by Benedictine monks of Siena. After the monks, the property would have many owners (most notably, the famous Niccolini family of Florence) but one of the more intriguing owners would be the Florentine Hospital of Santa Maria Nuova; it was believed that various fruits and vegetables were farmed during their time of ownership, along with the cultivation and production of grapes for wine and olives for oil. The land would eventually be purchased by the Farkas family in the 1860s and in 1967, the proprietors decided to renovate the wine cellars as well as replant the vineyards and olive groves. 

In present day, Villa Cafaggio covers approximately 60 ha, 30 ha dedicated to vineyards and 3 ha for olive groves- the rest of the property is entirely woodlands. Nestled in “Conca d’Oro,” which means “golden basin,” this area is known as one of the best for producing Chianti Classico. Owned, operated, and managed by La-Vis Group, a financial holding company from Trento, they produce four Chianti Classico wines and two “cru” wines; Cabernet Sauvignon and Merlot, respectfully.

Caparzo Brunello di Montalcino

Caparzo was established towards the end of the 1960’s. The vineyards of the Caparzo Estate include about. 90 hectares (210 acres) in Montalcino. The estate is located on a hillside area 220 metres above sea level, facing south and south-east. The company has grown and adapted with the times all while maintaining and respecting the traditions of the terroir. The rustic and elegant Caparzo villa, La Casa, located at the bottom of Montalcino is available for rent for those who want to fully experience the beauty and tranquillity of the Tuscan countryside. The origins of the place named Caparzo are still unknown and according to some, the name is derived, as shown by ancient maps, from Ca’ Pazzo. However, some say the term should derive from the Latin Caput Arsum, indicating “a place touched by sun.”
