Don Sebastiani & Sons is a family-owned company with roots in Sonoma for over a hundred years. Aquinas is a line of wines within the Don Sebastiani porfolio. They make luxurious wines from pre-eminent appellations a bit more accessible to all. The team meticulously scours the North Coast, to source the perfect fruit.
Tasting Notes
Pale garnet colour; aromas of dried fruit, cherry-dark berry, earth, plum and spice; dry, round texture with clean acidity, low tannin and medium-bodied; flavours of blackfruits, cherry, plum and some oak spice; medium-long finish. Enjoy with roast chicken or turkey dinner with all the fixins, pork ribs or pulled pork, turkey burgers, soft cheeses.
Method
The backbone of this wine comes from Pinot Noir grown in the heart of Sonoma Carneros. This fruit is prized for its concentrated fruit flavor and supple tannins. Some Pinot Noir is sourced from the Napa Carneros region, which adds body and outstanding cherry flavor. In addition to the Carneros (Sonoma & Napa) region, 20% of the fruit is sourced from the Russian River Valley contributing cooler regional influence while some fruit sourced from the Mendocino region of Anderson Valley brings jammy strawberry flavors and the good funky nuance of earth, forest floor and mushroom. The wine spends 10 months in 100% French Oak.
