French-Canadian Pascal Marchand moved to France in 1985 when he was 22 years old, beginning his winemaking journey at Clos des Epeneaux in Pommard and becoming part of a new generation of Burgundy producers who believed that good wine starts in the vineyard. After several stints all around the world and an impressive resume of consulting, Pascal became one of the best known “flying winemakers.”

Moray Tawse is a financier by trade, serving as the vice president and co-founder of First National. After realizing the potential of winemaking in Niagara, Ontario, Moray purchased his first six acres of vineyard in 2000. Five years later, he opened Tawse winery and has since acquired 200 acres of vineyards all over the Niagara region and has been named Canadian Winery of the year multiple times.

Marchand-Tawse is a co-venture between Pascal and Moray; this duo of vignerons/micro-négociants are working with their partner-growers in the many appellations of Burgundy while embracing organic and biodynamic farming practices, crafting wines of purity and class.

Tasting Notes

A fragrant and ethereal nose of field berries, forest floor and damp earth.   The palate is delicate but generous with a classic Pinot Noir structure of fine grained tannins and focused red berry fruit and juicy acidty.   The balance is sublime.  This is a youthful and charming wine that is enjoyable now, but will certainly reward the senses immensely with time in the bottle for those who are patient.  Drink with lean cuts of red meat, game, mushroom dishes, soft and bloomy rind cheeses.

Method

The appellation, Savigny-les-Beaune is in the Cote du Beaune in the southern portion of Burgundy and around the town of Beaune.  There are 22 Premiers Crus vineyards here and this wine comes from the premiers cru  which takes it’s name from “lava”  due to the thin layer of volcanic soil over clay in the vineyard.  There are no Grand Cru sites in Savigny-les-Beaune, but this site has long been expected to be converted to Grand Cru status as it has been producing wines of distinction for years.
