Fruit Lambic
Often known as cassis, framboise, kriek, or peche, a fruit lambic takes on the colour and flavour of the fruit it is brewed with. It can be dry or sweet, clear or cloudy, depending on the intended style. The term Oude seen on some labels denotes a fruit lambic that has been re-fermented on the fruit sugars, creating a dry and complex version. If the label does not have the word Oude, then it is most likely the sweetened, dessert-like style of fruit beer.
Notes of Brettanomyces yeast are often present at varied levels. Sourness is an important part of the flavour profile.
