Don Sebastiani & Sons is a family-owned company with roots in Sonoma for over a hundred years.  Aquinas is a line of wines within the Don Sebastiani porfolio.  They make luxurious wines from pre-eminent appellations a bit more accessible to all. The team meticulously scours the North Coast, to source the perfect fruit.

Tasting Notes

Aromas and flavours of cassis, blackberries, cedar and spice.  Ripe bramble fruit enfolds on the full bodied and plush palate.  The wine’s medium to low acidity, silky smooth tannins and ample brings a sense of creamy weightiness to the mouthfeel.  There is excellent depth of flavour.  What great value for North Coast Cabernet Sauvignon and a style that many would enjoy with steak, ribs, burgers and medium to aged cheeses.

Method

The backbone of this wine comes from Cabernet Sauvignon grown on Pauli Ranch located in Mendocino county. This cooler climate region gives Cabernet Sauvignon fruit with depth, structure, dark fruit flavor and subtle, complex herb notes. In addition to Mendocino, perfectly ripened fruit from Napa Valley, Lake County and Alexander Valley compliments the final blend. These additional North Coast appellations bring bright fruit flavors, lush round tannins and good structure throughout.  12 months of aging in primarily American oak and some French oak.
