For over 10 years Toronto’s Bellwoods Brewery has established themselves as one of the country’s most iconic craft breweries. From lineups around the block in the early days at their Ossington Ave. location, to opening a second much larger brewery complete with rows upon rows of barrels for mixed fermentation and dark beer ageing. Bellwoods has won a long list of national and international awards and have collaborated with countless world-class breweries.
Tasting Notes
This release of Barn Owl is bringing all of the funky and tart notes that we’ve come to love with this series, but the addition of Gamay wine pommace in the fermentation will add another dimension of stone fruit, earthiness, and wine-acidity. A touch of dry hopping helps round out the fruit and herbal notes that lead into a crisp, dry finish with lingering acidity and brettanomyces funk.
Method
Barn Owl is a series of one-off creations that are released sporadically throughout the year, just as soon as the Bellwoods team deems them ripe for bottling. No. 37 is a blend of barrel aged wild ales that are dry-hopped and further conditioned on Gamay wine grapes.
