Bodegas Aessir started off with the help of the Carbó family in Sant Sadurní d’Anoia, Barcelona, who has been in the Cava business since 1929 and managing 8 hectares of different varieties. Today Bodegas Aessir is committed to some very unique organic winemaking projects such as the production of wines made of the Bobal variety in the province of Cuenca at 969 meters above sea level.
Tasting Notes
Intense yellow in the glass. Very expressive on the nose, with exotic fruit and floral notes. The palate is round with good acidity, balsamic and red fruit flavours and a persistent finish.
Method
This is an organic white wine made from the red Bobal grape variety. The grapes are crushed and just 30% of yield is pressed so no pigment from the skins colours the juice. There is no skin contact during fermentation, as would be the case for red wine making. Hence a white wine from red grapes.
Chloe Short
Crisp, round, silky, with a nice long finish. Great for summer lunches, bbqs or to drink with oysters and shellfish. Yum!
