Tasting Notes

This Tempranillo delicately charms with it’s excellent velvety mouth feel, while providing powerful spice and mineral characteristics. Aromas of ripe fruit swirl through the experience of this wine as it, as the label suggests, excites all of the senses. 

Method

Made with hand harvested organic Tempranillo grapes.  The wine is fermented in a combination of concrete vats, small concrete eggs, temperature-controlled stainless steel vats and older oak barrels.   The extraction process is always done gently by hand, using destemmed grapes without crushing them, with low fermentation and maceration temperatures that vary according to the grape variety. Malolactic fermentation is carried out in concrete vats and partly in barrels.  The wine spends a short time resting in concrete or wood to stabilise naturally without clarification or filtration.
