The winery San Silvestro is located in the village of Novello, within the heart of the Barolo district. Here, Paolo and Guido Sartirano run the business with wisdom and respect for the tradition and for the history of this company. They represent the fourth generation and want to be respectful towards the work their family did to be where they are today. Investments for the future with a keen eye on values they’ve learned from their ancestors: consistency, authenticity and innovation.
They work closely with grape growers from different wine-areas in Piemonte to offer a range of wines from classic Piemontese grapes and appellations.
Tasting Notes
Pronounced aromas of ripe red fruit, cherry jam, plum, vanilla and red liquorice. The palate is medium bodied, with juicy stewed blueberries and black cherries. A rich wine with velvety tannins and a lingering finish.
Method
The grapes are harvested manually at two different times. 50% of the grapes are picked and dried for 40 days in baskets to concentrate aromas and colour. The other 50% are left on the vine for a natural appassimento (drying of the grapes) and harvested at a later date. Separate vinification is done on the each of method of the the dried grapes. Maceration takes place for 10 days with daily pumping over. The two wines are blended after the malolactic fermentation takes place and the wine is aged in small wooden barrels for 6-months.
