Located on a 37-acre farm in Caledon, ON. Sonnen Hill brewery uses the finest ingredients available for their hoppy beers and lagers as they aim to make classic beer influenced by modern brewing techniques. All of their saisons, fruit beers, and spontaneous beers use almost exclusively Ontario-grown ingredients and focus on natural fermentation using cultures from the environment around them. Even planting over 200 fruit trees that will be used to make beer in the coming years, a vegetable garden, and 12 beehives. Sonnen Hill is committed to restoring the land they use by working with our a conservation authority to reintroduce native grasses, wildflowers, and add bird and bat boxes to create a nice habitat for the wildlife around them. Tasting Notes
This is an easy-going beer with aromas of honey, flowers and sweet orange. A balanced, spicy bitterness and dry finish makes this one a real winner.
Method
Heart Lake Pils is a Pilsner that doesn’t fit into either the Czech or German categories – it’s just a good beer. A pale hoppy lager brewed with pilsner and wheat malt, and hopped with hersbrucker, saaz and saphir. Maybe it leans a little more towards a German style that is known to be more dry, light, and snappy.
