Located on a 37-acre farm in Caledon, ON. Sonnen Hill brewery uses the finest ingredients available for their hoppy beers and lagers as they aim to make classic beer influenced by modern brewing techniques. All of their saisons, fruit beers, and spontaneous beers use almost exclusively Ontario-grown ingredients and focus on natural fermentation using cultures from the environment around them. Even planting over 200 fruit trees that will be used to make beer in the coming years, a vegetable garden, and 12 beehives. Sonnen Hill is committed to restoring the land they use by working with our a conservation authority to reintroduce native grasses, wildflowers, and add bird and bat boxes to create a nice habitat for the wildlife around them. Tasting Notes
No Worry is a blend of three-year-old spontaneous beer and saison aged on Riesling wine lees in stainless for 24 months. It has a complex funk with light acid and a nice full mouthfeel. It’s super easy to drink and perfect for any occasion.
Method
In this mixed fermentation grape ale, Sonnen Hill took two different beers, one is a 3 year old beer that has been spontaneously fermented and left to age in oak, and the other is a fresh (not barrel aged) Saison beer that has sat in a tank with Riesling grapes for 2 years. The two beers are blended together in a way that allows the fresh and fruity beer to balance out the tart and funky barrel aged beer. The key to these beers is in the balance, where two already good things are coming together to make something even better. But don’t worry about all that.
