Fontsainte Gris de Gris

Domaine de Fontsainte is in the heart of the Corbières’ celebrated ‘Golden Crescent’ – one of the appellation’s most beautiful and beneficent terroirs. Fontsainte’s intensely sunny, gently sloping, south south-east facing vineyards shelter from cold north-east winds on the flank of a 500-hectare pinewood massif (right). The domain dominates the landscape around the hamlet of Boutenac, enjoying panoramic views. Fontsainte’s vineyards, just 95m in altitude, benefit from a pristine environment (far from industrial or urban developments) plus alternating Mediterranean and oceanic influences.   Domaine Fontsainte uses minimal intervention in the vineyard and winery; their viticultural approach is considered a “lutte raisonnée” practice.  They are certified “Haute Valeur Environnementale”;  a certification supported by the Ministry of Agriculture and verified by independent organizations.  The domaine protects the of biodiversity of flora and fauna in the vineyard and microbial life in the soil (using minimal copper or insecticides), all fertilizer must come from organic matter, and water use must be measured, reduced, or eliminated.

Haut Marin 'Les Fossiles'

This wine is made by Maison PraJa, that is, the Prataviera-Jegerlehner family.  It was established in Gascony in 1920 by an adventurous Swiss winemaker, Jean Francois Morel.  After starting with only 10 hectares, the family’s holdings grew to what is now 270 hectares today.  Elizabeth Prataveira, the 4th generation winemaker and owner, works alongside her brother Philippe who focuses on caring for the vineyards.  The estate is located in the heart of Bas-Armagnac on Via Podensis, trodden over the centuries by pilgrims waking the French route towards Santiago di Compostella in Galicia, Spain.

The wines from their aptly named Haut Marin, come from an area that was once covered by the sea over 23 million years ago.  Today, what remains is an ancient seabed with fossils of marine life that once existed.  The soils are geologically complex and composed of marine sediment, clay-limestone, shallow gravel.  This type of soil contributes to wines that are extremely pure and fresh.

Green Chartreuse

Created in 1840, the “Liqueur de Santé” is the first liqueur made from the original recipe of the Elixir Végétal de la Grande Chartreuse. It was so popular that Father Garnier, attorney and responsible for the liqueurs at the time, later decided to officially name it ‘Chartreuse Verte’, and registered the “Chartreuse” mark in 1852. It is still produced and manufactured today by the Chartreux Fathers in their Aiguenoire distillery in Entre-Deux-Guiers (Isère – France).

Gekkeikan Nigori Sake 300ml

Gekkeikan Nigori is a rough-filtered Junmai-shu. By definition Nigori means ‘cloudy’ and this style of sake is thicker and creamier in texture, with a milk-like appearance. The ‘cloudiness’ comes from the rice sediment which remains in the sake after it has been passed through a special coarse-mesh filter. Characteristically sweet with a creamy medium-body. Hints of honey and tropical fruit aromas and flavors terminate into a long finish.

Gekkeikan’s founder, Jiemon Okura established his sake brewery in the town of Fushimi, a location well-known for its high quality water. Access to the ideal ingredients combined with the location enabled Okura and his successors’ business to thrive. Today, Gekkeikan’s passion for pleasing the sake connoisseur remains unchanged.
