Refers to wild animals that have been hunted for human consumption. Includes meat from animals like deer, moose, wild boar, wild rabbit, male goat and at times even wild-caught duck and geese.
Meat from animals who have lived in the wild tends to be more lean, muscular and dark with an earthy pungency or even umami profile.
The intense flavours of game meats require a wine with an equally intense nose and palate. We find that old world wines with good tannin and acidity alongside similar earthy, gamey notes work best. Try wines like Chianti Classico, Barolo, Barbaresco, or red wines from Burgundy, etc.
