Dolin is one of the last independent vermouth producers and still follows the basic recipes from 1821. Chambery is the only controlled appellation in France for the production of vermouth and Dolin is the last producer of Vermouth de Chambery. There is truly nothing else quite like it. The Dolin vermouths remain much closer to the delicate base ingredients from which they are made and are more akin to fine wine than the grocery store vermouths most of us are used to. Many people are skeptical about vermouth having never tasted a traditional hand-crafted expression before. There is only one thing you can do: try it!

Tasting Notes

Aromas of herbs, camphor and citrus. The sweet, yet well balanced palate shows flavours of mountain flowers that give way to fresh almond and peach.  More complex and sweeter than the “Dry”, our French white vermouth contains some 32 plants and spices: hibiscus, basil, cinnamon as well as artemesia and gentian from the Alps are just some of them! You can enjoy this Dolin white vermouth on the rocks or add a fruit liqueur in the tradition of the “Chambery-cassis”, which was one of Hemmingway’s favorites. Why not try Dolin white vermouth in a cocktail where it will add a tangy note.

Method

The base wine is made with Ugni Blanc grapes and flavoured with a blend of wild herbs and spices from Alpine meadows above Chambery.  

Our Thoughts

Made with some 32 botanicals (the majority coming from the Alps), Dolin’s Blanc is more complex and a tad sweeter than their “Dry” – the classic choice when it comes to making the perfect martini. That complexity and subtle sweetness lends itself perfectly in a number of cocktails, most notably in the White Negroni (replace Lillet) or have it on its own over ice. My mixture of choice: in a double rocks glass, add 1.5 ounce over ice, fill the rest of the glass with sparkling wine (sub in club soda for a lower ABV version), and add a castelvetrano olive with a lemon peel for garnish – refreshing and just complex enough to keep you from drinking it all in one gulp!
