After Tilman Ludwig graduated from Bavaria’s famous Weihenstephaner brewing university, he spent two years brewing at Huus brewery in Switzerland before moving to Munich to open his own brewery in 2014. Since then, Tilmans has gone on to become one of Munich’s best modern breweries, making both traditional German styles and modern craft styles. Almost all of Tilmans business to date has been within Germany, and Bishop’s Cellar is extremely happy to introduce Tilmans beer into Canada for the first time!

With only the highest quality raw ingredients being used, coupled with long fermentation and maturing periods to produce a wonderfully round and balanced beer. On top of that, the beautiful branding and labeling are done by a local artist.

Tasting Notes

A notably different Helles than the traditional style you’d expect. Tilmans uses American hops in the late stages of brewing to lend a more herbal, citrus, and generally vibrant aromatic quality. This pairs very nicely with robust golden malt notes of sourdough bread and honey. A very modern take on an old style – dare we say even more refreshing?

Method

In the mid to late 1800’s, brewers in Munich wanted to take the hugely popular Pilsner style and tweak it slightly to palates that wanted less bitterness. A light lager was born, still using noble German hops but just less of them. Helles is German for light. It is light in flavour and hop character and it is the foundation for a lot of the industrial pale lagers that you see all over the world. 

This particular Helles however, is a much more modern take on the style. While the beer does use high quality Bavarian pale malt, the finishing hops used are American varieties.
