After Tilman Ludwig graduated from Bavaria’s famous Weihenstephaner brewing university, he spent two years brewing at Huus brewery in Switzerland before moving to Munich to open his own brewery in 2014. Since then, Tilmans has gone on to become one of Munich’s best modern breweries, making both traditional German styles and modern craft styles. Almost all of Tilmans business to date has been within Germany, and Bishop’s Cellar is extremely happy to introduce Tilmans beer into Canada for the first time!

With only the highest quality raw ingredients being used, coupled with long fermentation and maturing periods to produce a wonderfully round and balanced beer. On top of that, the beautiful branding and labeling are done by a local artist.

Tasting Notes

The German-style weissbier is straw to amber in colour and brewed with at least 50 percent malted wheat. The aroma and flavour of a weissbier comes largely from the yeast and is decidedly fruity (banana) and phenolic (clove). The intensity of these wildly differing flavour qualities varies depending on the brewer, but the two are most commonly balanced. Tilmans Der Weizen also has subtle fruity notes that are reminiscent of citrus fruits and white wine.

Method

Arguably one of the most recognizable beer styles – the German-style hefeweizen, or weissbier, offers an enjoyable beer experience thanks to the use of wheat malt, unique yeast and an hazy appearance. The refreshing qualities of this highly-carbonated style have kept it alive for centuries. The Tilmans Weizen is brewed exclusively with pale wheat and barley malt, it ferments with the typical weizen yeast, but Tilmans adds a little bit of dry-hopping with American hops to provide a bit of added oomph. Refermented in the bottle to create an effervescent carbonation.
