Uncle Val’s is a small-batch botanical gin inspired by Zio Valerio’s (Uncle Val) love of gardening and native Tuscan cuisine. The botanicals are not only Uncle Val’s favourite cooking ingredients, but also happen to make an exceptionally unique and smooth delicious gin. Val’s is a perfect marriage of juniper, cucumber, lemon, sage, and lavender.
Tasting Notes
From the distillery: On the nose, you’ll notice crisp, bright aromas of sage and juniper. On the palate, you’ll taste bright lemon, which then gives way to a warm, spicy, lavender finish. Further along, you’ll experience the cooling effect of the cucumber. Each sip bolsters the botanical flavors, along with a continuous presence of piney juniper.
Method
The base spirit is distilled from 100% corn and undergoes a whopping 5 distillations before being filtered through lava rock for a super crisp and clean spirit. Uncle Val’s is a compound gin so the botanicals used (juniper, cucumber, sage, lemon and lavender) are cold infused in the base spirit after distillation. After the flavours have been sufficiently infused, the gin is filtered again and diluted to 45% alcohol before being bottled.
Our Thoughts
Nose: Cucumbers like crazy when you first open the bottle but given the time this gin opens right up to a world of aromas- think lime, green banana, and orange rind. Extremely fresh, not at all boozy.
Palate: Round and rich mouthfeel. Smashed-up tangerines, bright acidity, and slightly vegetal (carrot juice) on the finish.
