Samuel Smith - Nut Brown Ale

The Samuel Smith brewery in Tadcaster was founded in 1758 and is Yorkshire’s oldest brewery. Samuel Smith is one of the few remaining independent exporting breweries in England and is the last to utilize the classic Yorkshire Square system of fermentation solely in stone (slate) squares.

The rich Samuel Smith strain of yeast at the brewery dates from the early 1900s. Hops are hand-weighed by the master hop blender, and the brewing water is drawn from the original well, sunk over 250 years ago.

Samuel Smith produces over a dozen beers, but they are most known for their ultra-traditional English ales. The Organic Pale Ale, Taddy Porter, Oatmeal Stout, Imperial Stout, and Nut Brown are all considered some of the world’s best examples of their styles and are often seen as the benchmark in their categories.

Chimay - Red (Dubbel)

Chimay is the name of the Trappist brewery* that produces beer within the Scourmont abbey, 1km from the French border, and they have been brewing beer since 1862. Losing their copper brewing kettles to the Nazis during the war, the brewery had to restart over, but have since become arguably the most well-known Trappist brewery in the world. Like most Trappist breweries, Chimay has a house yeast culture, some may call a “super-yeast” that can produce exceptionally complex, and elegant styles of beer.

*The term Trappist Brewery relates to beer made within the walls of a Trappist abbey, where the brewing is performed by, or under the supervision of Cistercian monks. There are only a handful of legally defined Trappist breweries in the world.

Lindemans - Framboise (Raspberry) Fruit Lambic

Southwest of Brussels, in the quiet Belgian town of Vlezenbeek, the Lindemans family has been farming and homebrewing as long as anyone can remember. Commercial brewing started in 1822.

Lambic, or spontaneously fermented beers, are the beers of this region and are among the world’s rarest: they are the only beers fermented via wild, airborne yeast – no yeast is added by the brewers. Lambics come only from the Senne River valley, near Brussels – a region about 15 by 75 miles in size. The unusual, demanding, and unique flavors that come from multiple yeast strains are unmatched in the world of beer.

Wild - Boar Cider

For centuries in the Annapolis Valley, farmers have pressed apples and fermented the juice in cool cellars over many months as a means of preservation and to yield a diverse range of cider refreshments. Wild Wines & Spirits uses native and selected yeasts to ferment pure apple juice, pressed on-site from apples they hand pick themselves. The cider is fermented slowly over the cool winter months, aged in barrels and tanks, then blended and bottled the following year.

Rittenhouse Straight Rye Whiskey

In 1999, Heaven Hill Distillery purchased the Rittenhouse Straight Rye Whisky brand, and kept it alive during a time when the popularity of whiskey was in decline. Then came the 2000s, starting in New York City, a cocktail Renaissance resurfaced classic recipes to spirits fans. Bartenders looking to keep their beverage programs true to history turned to cocktail books dating back to the mid-1800s. These books features rye, not Bourbon, and the former surged in popularity. At the time, Rittenhouse was the only Bottled-in-Bond Rye Whiskey on the market, and at 100 proof, it held up well when mixed in cocktails. It was also well balanced, and the high percentage of corn in the mashbill made it easy to enjoy for those who were new to the category. It quickly became a must-have spirit for many craft cocktail programs.

Rittenhouse Straight Rye Whisky has a storied past with a heritage that commemorates Philadelphia’s famous Rittenhouse Square. Bottled-in-Bond, today’s Rittenhouse carries the distinct, spicy flavor that is long associated with the brand. Rittenhouse is the Rye Whisky of choice for both mixologists and whisky aficionados alike.

Paddy's Irish Whiskey

Patrick J. O’Flaherty, better known as Paddy, sold what became his namesake whiskey in pubs across Ireland for an incredible four decades, spanning the turn of the 20th century. Magnetic, outgoing and generous, Paddy bought rounds and made friends everywhere he went, always making sure everyone had a great time. Kind and wise, with a good natured, rapier wit, Paddy was always welcomed and was by all accounts universally beloved. After 40 years of service, the whiskey he sold took on his name.

There’s a reason Paddy has been triple distilled the same way in County Cork Ireland for nearly a quarter-millennium. Some good things don’t come to an end.
