Venturini Baldini Montelocco Rosso

Venturini Baldini was founded in 1976 on an historic 16th century estate in the hills between Parma and Reggio Emilia, the heartland of Lambrusco wine making. Of their 135 hectares, only 30 hectares are vineyards, the remainder being left as wild woods and pastures that buzz with life and biodiversity.  As one expects from great sparkling wine farming, Venturini’s vines are planted among the south facing slopes of their sandy clay foothills that roll from 300-400m above sea level with excellent drainage and a wide diurnal temperature. Moreover, Venturini was among the first in the region to obtain organic certification (1976). Their name has been synonymous with the highest quality Lambrusco for decades now.  

They were fortunate to have one of Italy’s best-known winemakers, Carlo Ferrini, overseeing their wine production since 2015.  His professional career spanned more than 40 years of working with many iconic Italian wine estates. In early 2021, Venturini Baldini announced Ferrini’s retirement from the estate and replacement by the equally famed Riccardo Cotarella , widely considered Italy’s number one Eonologist at present.  The wines continue to impress local and international markets.

Fibbiano Sanforte IGT Costa Toscana

The staff at Bishop’s Cellar are excited to have a few wines from Fattoria Fibbiano in the shop thanks to a happy accident at a Prowein, where Jason Macleod thought he was going to a meeting to taste Burgundies and ended up tasting some delicious organic Tuscan wines instead. He then suggested that our colleague Jason Macphee seek them out later at VinItaly to confirm that the wines he tasted were as delicious as he thought. Indeed they were and so we ordered them for you.

Fattoria Fibbiano is a family-run, certified organic farm. Giuseppe, the father, deals with the general management of the estate and takes care of the vineyards and countryside. Matteo, the eldest of the two sons, is in charge of marketing the wines and his brother, Nicola, is the winemaker who oversees the entire wine-making process. Three generations of the Cantoni family live in one part of the 1,200 m2 farmhouse which also houses the agritourism. The land surrounding the farm is only treated using organic fertilizers and human intervention is kept to a minimum. From the point of view of energy consumption, the agritourism is completely self-sufficient with a 30-KW photovoltaic plant, a solar plant for the production of fresh water, and central heating which uses the wood obtained from pruning the river banks and from clearing the woodland.

Tornatore Trimarchisa Rosso

The roots of this winery go back when the Tornatore’s Mount Etna wine ventures began in 1865. Today, the family’s operations are headed by the entrepreneurial businessman, Giuseppe Tornatore, whose family always had ties to Etna. A blend of indigenous grapes; predominantly Nerello Mascalese with a dash of Nerello Cappuccio from the Trimarchisa district. The grapes grow at an altitude of 400-500m above sea level. The juice is aged 18 months in 25 hl barrels and 6 months in bottle before release.

One of the most storied estates in RoussillonDomaine de Rombeau traces its origins to 1727, when the de la Fabrègue family first arrived in Rivesaltes from Lyon. By 1850, the family had amassed vineyard holdings and became of one the region’s first to bottle wine. Tanks that date from that period can still be found on the estate. The family persevered through phyolloxera and successive World Wars, continually delving deeper into the region’s traditions while remaining open to the possibilities of the future. Clos du Val Hirondelle Vineyard

Clos Du Val, French for “small vineyard estate of a small valley,” was founded in 1972 in the now legendary Stags Leap District by John Goelet and French winemaker Bernard Portet.   After a worldwide search to purchase vineyard properties from which to craft world-class wines, 150 acres in the now legendary Stags Leap District and 180 acres in the cool Carneros District were chosen, from which Clos Du Val Winery, a true Napa Valley icon, was born.  The wine was first recognized for is Napa Valley Cabernet Sauvignon at the famed Judgement of Paris in 1976.   Today, for Clos Du Val winemakers John Clews and Kristy Melton, it’s the fruit from these distinctive vineyards that serves as the foundation for crafting the balanced, terroir-driven wines of elegance for which Clos Du Val is known.

Francis Ford Coppola Diamond Collection Claret

Domaine Tempier Bandol Rose

The iconic Domaine Tempier has been an active family run farm since 1834 and was given to “Lulu” Tempier and Lucien Peyraud in 1936 as a gift from Lucien’s father. Thanks to Lucien’s dedication in helping revive the Mourvedre grape, Bandol is often cited as being a “grand cru of Provence”.  The terroir of Domaine Tempier is varied and complex.  The land is made up of a patchwork of geologically diverse plots spreading on over a 60 hectare area.  Domaine Tempier has always been respectful and faithful to mother nature. The entire farming process is aligned to the rhythm of the seasons and the lunar calendar; they are an organic and biodynamic wine estate.

Jean Max Roger Cuvee GC

The Roger family descends from a long line of winegrowers from the village of Bué in the appellation of Sancerre.  Jean-Max Roger took over the four hectares of vines left to him by his parents in the early 1970s and expanded the estate to its current size. Beginning in 2004, two of his three sons, Etienne and Thibault, came back to work at the estate after various professional careers in France and abroad. His third son, Xavier, lives his passion for wine in the Roussillon region. Today, the estate covers a surface area of 26 ha in the Sancerre AOC area of production which is located along the Loire River. It also includes 6 ha of vines located in the Menetou-Salon AOC area of production where the first plantations date back to 1981. They produce white wines made from Sauvignon Blanc as well as reds and rosés from Pinot Noir. They also produce Pouilly-Fumé, in the neighbouring appellation located opposite Sancerre on the left bank of the Loire.

Villa Cafaggio Chianti Classico

With records that date back to 1408, Villa Cafaggio’s estate was then referred to as “Cahago,” which means “enclosed, cultivated field.” Later in the fifteenth century, there was evidence to suggest that the property was owned by Benedictine monks of Siena. After the monks, the property would have many owners (most notably, the famous Niccolini family of Florence) but one of the more intriguing owners would be the Florentine Hospital of Santa Maria Nuova; it was believed that various fruits and vegetables were farmed during their time of ownership, along with the cultivation and production of grapes for wine and olives for oil. The land would eventually be purchased by the Farkas family in the 1860s and in 1967, the proprietors decided to renovate the wine cellars as well as replant the vineyards and olive groves. 

In present day, Villa Cafaggio covers approximately 60 ha, 30 ha dedicated to vineyards and 3 ha for olive groves- the rest of the property is entirely woodlands. Nestled in “Conca d’Oro,” which means “golden basin,” this area is known as one of the best for producing Chianti Classico. Owned, operated, and managed by La-Vis Group, a financial holding company from Trento, they produce four Chianti Classico wines and two “cru” wines; Cabernet Sauvignon and Merlot, respectfully.

Castello Tricerchi Brunello 750ml

Castello Tricerchi extends over 400 hectares on the northern slopes of Montalcino. 13 hectares are dedicated to the cultivation of Sangiovese Grosso , the vines which produce Brunello and Rosso di Montalcino . The Castle of the Tricerchi family , completed in 1441, dominates the property and is now the home and headquarters of the Tricerchis’ direct ancestors, the Squarcia family. 

The vineyards are planted at 290 m on the northern slopes of Montalcino, which are characterised by cooler temperatures and marked thermal variations.  The estate is comprised of 13 hectares of vines, all of them Sangiovese Grosso, which surround the castle in 7 separate plots cultivated using spurred cordon and guyot: La Vigna del Velo, whose name derives from the chapel devoted to the Virgin of the Veil, the Vigna del Castello, the Vigna Sant’Anna, the Vigna del Lago, the Vigna dei Cipressi, the Vigna del Piano and the Vigna Nuova.  The soil composition is a homogeneous limestone clay and sand. The vines are almost exclusively north facing which allows for uniform ripening.  Castello Tricerchi farms according to organic principles with great respect for nature.

Tornatore Etna Bianco

A rising star in the Etna region, Tornatore is becoming one of the region’s biggest and most respected wineries. Their vineyards are located at an altitude of 1,000 meters above sea level on the north side of this active volcano.

Out of a Sicilian family heritage that traces back to the 17th century, the Tornatore’s Mount Etna wine ventures began in 1865. Today the family’s operations are headed by Giuseppe Tornatore, a businessman whose expertise led to the acquisition of some of the region’s finest north-facing vineyards in the early 2000’s. That heritage and the Tornatore’s profound respect and understanding of the land is showcased in wines that capture the essence of Etna, deftly balancing concentrated flavors, complexity, freshness and refinement.

The company lies in the northern side of Mount Etna, the highest active volcano in Europe. The soils have volcanic origin and were created through the disintegration of lava, ash and stones from previous volcanic eruptions. The climate on the northern side of the Etna is characterized by mild temperatures, and more rain fall reflecting the influence of the Volcano. The combination of soil, climate and the skill of the winemakers, have made the northern slope of Etna an ideal area for the production of high-quality wines. “Our vineyards and our winery are only a few kilometers from our family home. The GlenAllachie Distillery was one of the few post-war distilleries designed by William Delmé-Evans and focused on using gravity-fed methods to reduce energy requirements. The distillery was built in 1967 and began its first production run in 1968. For most of its life, the GlenAllachie Distillery was a production distillery used to produce large quantities of malt whisky for use in blends like Chivas Regal and Clan Campbell. It wasn’t until the 1990s that the distillery saw its first official bottling.

After leaving Montreal to live in Japan and open his own brewery, Lafontaine was caught between red tape and the pull of coming home, so he came back to Canada and opened Godspeed in 2015.

Lafontaine is striving to craft beers of simplicity and finesse that express the cardinal flavor of their ingredients. He draws inspiration from traditional Czech brewing and Japanese cuisine, prizing above all the keen attention and care required to allow each element to articulate itself as a discrete part of the composition. When it comes to Godspeed beers,  an “inspiration first” approach is taken; each release its own capstone after many years of travel, collaboration, experimentation, and personal growth. Samuel Smith - Nut Brown Ale

The Samuel Smith brewery in Tadcaster was founded in 1758 and is Yorkshire’s oldest brewery. Samuel Smith is one of the few remaining independent exporting breweries in England and is the last to utilize the classic Yorkshire Square system of fermentation solely in stone (slate) squares. 

The rich Samuel Smith strain of yeast at the brewery dates from the early 1900s. Hops are hand-weighed by the master hop blender, and the brewing water is drawn from the original well, sunk over 250 years ago.

Samuel Smith produces over a dozen beers, but they are most known for their ultra-traditional English ales. The Organic Pale Ale, Taddy Porter, Oatmeal Stout, Imperial Stout, and Nut Brown are all considered some of the world’s best examples of their styles and are often seen as the benchmark in their categories.

Ayinger - Oktoberfest Marzen

Ayinger Brewery has a long-standing reputation for excellence in beer and hospitality. Although Ayinger was founded in a picturesque village 25 kilometers from Munich in 1878, the site of the Ayinger Gasthaus Brewery Hotel has been one of Bavaria’s most famous restaurants for more than 500 years.

In the shadow of the Alps, nestled in the 1200 year-old village of Aying (pronounced eye-ing), Brauerei Aying produces 12 different styles of beers, more than most of the larger German breweries. The Ayinger Brewery has been owned and operated by the same family since 1878 and represents one of the most pleasant and interesting small breweries which are typical of Europe. Brewing good beer is the premier duty of Aying, and people come from all over the world to sample the brews.

Pinkus Müller - "Ur" Pilsner

The Pinkus-Muller brewery traces its origins to the family’s arrival in the Northern German town of Munster in 1816. At that time, Johannes Müller and his wife Friederika Cramer started an altbier brewery and a bakery. Since their arrival, 150 breweries have come and gone from Munster. Only Pinkus remains.

Today, the fifth and sixth generations of the family operate the famous Pinkus-Muller Pub/Brewery. So dedicated to quality is Pinkus, that they are the first all organic brewery of the modern era to brew with only organically-grown barley malt and whole hop blossoms. They produce 20,000 hectoliters per year.
