Thanksgiving pairing: Pastel de Choclo (Chilean shepherd’s pie)
You can think of Pastel de Choclo as a Chilean Shepherd’s pie, made up of a rich base of pino — ground beef, onions, boiled eggs, olives, raisins — topped by creamy mashed corn. This is a rich dish, classic comfort food, which I’ll be trying my hand at this Thanksgiving. What better wine pairing than the Echeverria Pinot Noir? A touch of spice and ripe red fruit alongside hints of chocolate and mocha, round and soft while still offering a lively acidity. This wine can be enjoyed on its own while preparing dinner, but also has body enough to complement Pastel de Choclo’s blend of sweet and savoury.
