Chablis

In this northern region of Burgundy, Chardonnay grapes grow in prized Kimeridgean limestone- a fossilized oyster bed. This unique soil combined with the region’s northern climate and cooler location, produces a style of wine that is very clean, crisp and mineral. Chablis is characterized by citrus and green fruit- never dominated by oak.

The region encompasses vineyards of Petit Chablis, Chablis, Chablis Premier Cru and Chablis Grand Cru. As you move from Petit Chablis up to the Grand Cru level there is a progression of intensity and complexity in the wines, along with the possibility of bottle ageing in the Grand Cru wines.

*Wine geek note – Petit Chablis actually grows on Portlandian clay.
