Ochota Barrels Slint Chardonnay

After travelling around the world’s best wine (and surf) regions, Taras and Amber Ochota decided they wanted to make premium wine, back home in South Australia. Initially, Grenache from Mclaren Vale and Syrah from Barossa Valley were the main goals, with a focus on small batch, single vineyard wines. Since then, the Ochotas now dabble in several different varietals in interesting, older plots throughout Adelaide Hills. 

Throughout their travels of France, smaller, biodynamic producers left a big impression of them, influencing their wine-making- something that can still be seen today; hands-off, minimum-intervention, picking early to maintain natural acidity, ferments using indigenous yeasts, whole-bunch pressing the whites, whole-bunch fermentation and longer maceration for the reds. “A holistic approach from autumn to autumn in the vineyard, with the philosophy of going back to basics to create something delicious and unique with mother nature.” – Taras & Amber Ochota

Taras Ochota died suddenly in 2020. He was a huge talent, a friend to many and will be sorely missed. His wife Amber and the Ochota team are continuing the project.

Ochota Barrels The Green Room

The Ochota Barrels tale began on a surf trip, late 2000 along the Mexican west coast in a Volkswagen campervan. A final destination after traveling some of the world’s most amazing wine and surf regions, Taras and Amber Ochota conceived the idea to make beautiful holistic wines back home in South Australia.

After a mis-spent youth playing a rickenbakker bass in various punk bands, Taras became an Oenology graduate from Adelaide University, developing his craft in numerous vineyards and cellars around the world to then settle with Amber on 9.6 steep gorgeous acres tucked away, deep in the Basket Range of the beautiful Adelaide Hills.  Before this Taras worked as the European Flying Winemaker Consultant, concentrating on the Italian regions, Puglia, Abruzzo Sicily and further,  for a Swedish wine importing company . 

They take a holistic approach in the vineyard, the small biodynamic producers they met in the south of France have been a huge influence. A hands-off, minimum-intervention approach to winemaking: picking early to maintain natural acidity, ferments using indigenous yeasts, whole-bunch pressing the whites, whole-bunch fermentation and longer maceration for the reds. Texture is an important focus, mouth-feel is created via time on skins and batonnage. Aging is in old French oak, just a touch of sulphur is used at bottling. The wines are mouthwatering, they have a compelling energy and nervous tension. In Taras’ own words “We just want to produce something delicious and gorgeous for all of us to enjoy with none of the nasties and more of the love”. Taras Ochota died suddenly in 2020 from an autoimmune disease.  His wife Amber and the Ochota team are continuing the project.

Villa Sparina Barbera

The Villa Sparina vineyards and winery were founded by the Moccagatta family in the 1970’s in Monterotondo, Piedmont, the heart of the Gavi DOCG. Villa Sparina comprises 100 hectares of land, 70 of which are cultivated with local grapes for the production of Gavi and Barbera wines.  The estate produces a few wines from the Cortese grape; a Gavi di Gavi and a cru bottling from Monterotondo. The terroir exalts the acid component, savory and mineral features of the grape and contributes to the ageability of these wines.

Villa Cafaggio Chianti Classico Riserva

With records that date back to 1408, Villa Cafaggio’s estate was then referred to as “Cahago,” which means “enclosed, cultivated field.” Later in the fifteenth century, there was evidence to suggest that the property was owned by Benedictine monks of Siena. After the monks, the property would have many owners (most notably, the famous Niccolini family of Florence) but one of the more intriguing owners would be the Florentine Hospital of Santa Maria Nuova; it was believed that various fruits and vegetables were farmed during their time of ownership, along with the cultivation and production of grapes for wine and olives for oil. The land would eventually be purchased by the Farkas family in the 1860s and in 1967, the proprietors decided to renovate the wine cellars as well as replant the vineyards and olive groves. 

In present day, Villa Cafaggio covers approximately 60 ha, 30 ha dedicated to vineyards and 3 ha for olive groves- the rest of the property is entirely woodlands. Nestled in “Conca d’Oro,” which means “golden basin,” this area is known as one of the best for producing Chianti Classico. Owned, operated, and managed by La-Vis Group, a financial holding company from Trento, they produce four Chianti Classico wines and two “cru” wines; Cabernet Sauvignon and Merlot, respectfully.

Chateau Trinquevedel Tavel Rose

Guillaume Demoulin is the fourth generation of his family to farm the vineyards of Château de Trinquevedel. The eighteenth-century château was purchased in 1936, the same year that the Tavel A.O.C was established. Tavel is the only Southern Rhone Cru that is entirely made up of rosé. No more than sixty percent of the final blend can be made up of the noble Grenache grape. Guillaume and his wife Céline farm thirty-two hectares of vines situated in the hills of the Montagne Noire. Their stony vineyards are similar to those of Châteauneuf-du-Pape and the climate and sun exposure produce grapes with tremendous concentration and power.

Lavantureux Chablis Grand Cru Bougros

Originally, the wine produced by the Lavantureux family was mainly drunk by family and friends.  Marine and Gervais, Roland’s paternal grandparents, began to sell the wines from the domaine in “feuilettes” (132 liter barrels, typical of Chablis) in Auxerre and Paris.  Roland was the first to bottle the wines in 1979 and it was then that he gave his name to the domaine.  He expanded the domaine from 5 hectares to 20 hectares and continued to develop the business in France and abroad.  The domaine is about 20 hectares of Chardonnay vines in Lignorelles, about four miles northwest of Chablis.  Since 2010 his sons Arnaud and David  work alongside him. Arnaud works in the vineyards and cellar, while David takes the lead in marketing and sales.  The domaine is known for making no no nonsense reliable and delicious Chablis.

Grosjean Petite Arvine

The Grosjean family traces its roots back to the village of Fornet in the high mountain passes of the Valle d’Aosta, Italy’s smallest wine region.  During the summer months, the family cultivated grapes and chestnuts on the slopes at lower altitude, stocking up on wine to supply themselves over the long winters. In 1969, Dauphin Grosjean, the father of the five sons that now collaborate to produce the wines of this estate, was encouraged to present his wine at the local “wine expo” and the exceptional quality of his work was recognized.  The family then expanded their vineyards and production.    

The estate has now grown to encompass seven hectares of vineyards. The domaine is located in the hamlet of Ollignan on the border of the towns of Quart and Saint Christophe and includes “cru” vineyard sites.  After starting out with the traditional Petit Rouge along with some Gamay, Pinot Noir and Petite Arvine, the Grosjeans have planted other local varietals such as Fumin, Cornalin, Premetta and Vuillermin. Sustainable farming techniques have been in place since 1975: only organic fertilizers are applied and no pesticides or herbicides are used. Natural yeasts are utilized for fermentation.

Noble Vines 446 Chardonnay

James Ewart grew up making wine at the side of his father, one of Australia’s great Chardonnay winemakers. James is one of a very few winemakers who have also completed a graduate diploma in grape growing (viticulture), from the University of Adelaide in 1999. This followed his undergraduate degree specializing in geology, soils, and chemistry – valuable knowledge when matching Noble Vines’ time-honored vines to specific locations with one of North America’s leading viticulturists, vineyard manager Charlie Hossom.

James’ experience includes Mountadam Winery, under the tutelage of David Wynn, known for his pioneering work with Cabernet and Syrah in Coonawarra, Australia, Cloudy Bay in Marlborough, and his family’s estate in the Adelaide Hills. A brief stint at Noble Vines’ San Bernabe Vineyard in 2000 turned into a career there when Monterey County legend Bill Petrovic recognized James’ skill in making wine with a vineyard-based philosophy. James is proud to carry on Mr. Petrovic’s legacy at the Noble Vines Collection.

Gekkeikan Nigori Sake 300ml

Gekkeikan Nigori is a rough-filtered Junmai-shu. By definition Nigori means ‘cloudy’ and this style of sake is thicker and creamier in texture, with a milk-like appearance. The ‘cloudiness’ comes from the rice sediment which remains in the sake after it has been passed through a special coarse-mesh filter. Characteristically sweet with a creamy medium-body. Hints of honey and tropical fruit aromas and flavors terminate into a long finish.

Gekkeikan’s founder, Jiemon Okura established his sake brewery in the town of Fushimi, a location well-known for its high quality water. Access to the ideal ingredients combined with the location enabled Okura and his successors’ business to thrive. Today, Gekkeikan’s passion for pleasing the sake connoisseur remains unchanged. Dedicated just as the founder was over 370 years ago, both Gekkeikan Japan and Gekkeikan USA continue the tradition of taste and quality.

Kooksoondang - Ssal Makgeolli

Makgeolli is an alcoholic drink made and mostly enjoyed in Korea. Made from a mixture of wheat and rice, is it sweet and milky with a clean and smooth taste. Classified and described as a ‘sparkling rice wine.’ Very traditional! Low alcohol (3%), serve chilled, and gently shake before drinking  for better taste and richer flavor.

Chum Churum Peach Soju

Soju is a very popular spirit sold in Korea that is traditionally made by distilling rice and other cereal grains. However, since the 1960s to alleviate rice shortages, most soju has been produced by diluting high strength neutral alcohol from distilled sweet potatoes or tapioca.

One of the most trendy brands in South Korea, Chum Churum (which translates as “like the first tme”) is popular because of the added alkaline water, higher sweetness, and relatively lower alcohol content. This smoother and softer profile has been extremely successful and is especially popular among younger drinkers in South Korea.

Basil Hayden's Bourbon

Bourbon brands tend to celebrate individuals when naming their product and here we see the celebration of Basil Hayden Sr. The Hayden Family emigrated to the United States from England in 1660. Basil Hayden Sr. would later lead a group of 25 families from Maryland to Kentucky where he would start distilling. In 1796, he broke ‘the rules’ by mixing small grains into the mash of a traditional corn based whiskey.

Today, Basil Hayden’s Bourbon is produced by Jim Beam (a subsidiary of Suntory) and is the lightest-bodied bourbon whiskey in their portfolio.

Birra Moretti - Original Lager

Birra Moretti is one of Italy’s oldest continually operating breweries, having established themselves in 1859 in Udine. In 1996 Moretti was bought by Heineken.
