🐰 Easter Pairing: Candied sweet potatoes

Easter dinner is the same every year in the McIntyre family; Mom cooks the massive Turkey and “the kids” help out with the sides.  There are usually a few different wines opened over the holiday weekend; the classics (sparkling, Chardonnay and Pinot Noir always make an appearance) in addition to some surprise varietals. This year, I’m bringing a bottle of Rolly Gassmann Pinot Blanc to pair with my side of sweet potatoes.  This biodynamic Alsatian white is a wonderfully rich and textural expression of Pinot Blanc. Aromas of pear and apple, light floral and honeysuckle notes.  The palate is subtly cream with a whisper of residual sweetness and enlivened by just the right amount of acidity.  The wine compliments and echoes some of the same aromas, flavours and textures of the fragrant, rich and slightly sweet side dish, but delicious to sip on its own or with a cheese plate!
