Aromas of stone fruit, like white peach and nectarine, are accompanied by fresh green melon, grapefruit pith, and hints of grassiness. The palate is bright with a saline minerality that balances the ripe fruit. Comparable to Sauvignon Blanc, this wine is refreshing as an aperitif but also pairs well with light fish dishes, and summer salads. One of the best ways to drink Verdejo is alongside food. The wine’s higher acidity and subtle bitterness make it work very well as a palate cleanser. Things to keep in mind when creating pairings is to use Verdejo’s lime and citrus flavours to offset a dish. As a general rule, if you put lime in the meal, it will probably pair well with Verdejo! A great little option for something a little different for those that enjoy Sauvignon Blanc. Happy pairing!
