Jason has over 17 years of experience as a wine merchant and he’s been with Bishop’s Cellar since 2013. He believes the advice he received early in his career that “drinking wine with good food and good company enhances your conversation, your meal, and your life”.

Jason works in our shop and within our purchasing team to manage the store’s wine needs. He has a true passion for being an approachable wine professional: he works hard to make wine shopping less complicated and intimidating for customers of all knowledge levels.

A self-proclaimed “Rhone Ranger” (lover of wines from the Rhone Valley in France), Jason keeps busy and active outside the store. He also loves baseball, hitting the gym, spending time with his awesome fiancee Amanda, and getting outside with his dog Riley.

Jean Marie Rimbert Is located in a small  AOC, Saint Chinian Villages Berlou in the Languedoc. Arriving 25 years ago he fell in love with the schist-laden soils and the characteristics which the soils gave to the wines. His main goal is to preserve the environment and create wines that are more pleasurable, lower in alcohol, and easy to drink.

Although the focus is on the traditional grapes to the area, he does purchase grapes from neighbours who farm in accordance with the HVE (Haute Valeur Environnementale, ie. sustainable).

From that process comes the For Me Formidable Merlot. Floral notes of plums and strawberry on the nose carry over well on the palate. Medium to light bodied, balanced acidity, soft tannins, and a lingering peppery finish. Truly one of the more refreshing wines I have had in quite some time. Will benefit from being served slightly chilled. A great red wine pairing for any dish that traditionally would call for a white wine.
